Le Macaron Founders Celebrated in Franchise Magazine
Popular franchise industry publication FranchiseDictionary recently featured Le Macaron dessert franchise co-Founders, Rosalie Guillem and Audrey Guillem-Saba, in this month’s issue, which celebrates women in franchising. The mother-daughter duo, whose article, aptly entitled “Smart Cookies,” appears on page 50 of the special issue. In their feature article, Rosalie shares the inspiring backstory of the Le Macaron French Pastries dessert franchise, beginning all the way back in 2002, when she first moved to the United States. “Here, I was unable to find one macaron,” she tells FranchiseDictionary. When her quest for the authentic French cookie proved fruitless stateside, Rosalie became inspired to start her own business to introduce Americans to “the gem of French pastries,” the magnificent macaron. Together with her daughter Audrey, Le Macaron French Pastries was born in Sarasota, Florida, in 2009.
In the FranchiseDictionary article, Rosalie recounts that she and Audrey were amazed by the number of people, some driving in from two hours away, who came to their first French pȃtisserie. She says, “It was fantastic to see all these people come to our location. They really love the product and they really love the ambience of the café.” As word of mouth spread and Le Macaron gained more and more of a fervent fan base among their local market, Rosalie and Audrey decided to open more locations, and began franchising Le Macaron in 2012.
